Un certain de Caol Ila furent mis en bouteilles dans le cadre des Special Releases de Diageo (p. ex., Caol Ila 25 ans 58.4%, Caol Ila unpeated 1998 10 ans, Caol Ila "bottled only for the friends" 43%). La première mise en bouteille officielle d'un fût unique (single cask) fut en 2009 à l'occasion du Feis Ile, suivi de la version Manager's choice en 2010. Avant son apparition dans la gamme Classic Malts (Hidden Malts), une version 15 ans à 43% fut disponible dans la gamme Fauna & Flora, ainsi qu'à plusieurs occasion dans la gamme Rare Malts. Un Caol Ila 15 ans Manager's Dram et une version pour le 150eme anniversaire de la distillerie furent disponible exclusivement pour les employés.

Histoire de la distillerie de Caol Ila
La distillerie de Caol Ila fut construite en 1846 par Hector Henderson.
Norman Buchanan pris sa succession en 1854, lorsque les affaires d'Hector Henderson furent séquestrées. Buchanan cessa son activité en 1863 lorsque la distillerie fut acquise par Bulloch Lade & Co. La distillerie fut agrandie et améliorée en 1879. Caol Ila fut la première distillerie sur l'île a utilisé le ciment pour sa construction. La production fut alors de 381,500 LPA. Bulloch & Lade se mit en liquidation volontaire en 1920. Son nouvel acquéreur J.P. O'Brien Ltd la revendra la même année à Caol Ila Distillery Co Ltd, une compagnie propriété de Robertson & Baxter Ltd. Le nouveau propriétaire investit des sommes considérables afin d'améliorer la productivité. La Distillers Company Limited et ses affiliés obtinrent le contrôle de la distillerie en 1927 et l'intégralité des actions 3 ans plus tard. La distillerie fut mise à l'arrêt entre 1930 et 1937.
En raison des restrictions pendant la deuxième guerre mondiale, la distillerie fut fermée entre 1941 et 1945. Les aires de maltages furent fermées en 1970. En raison de l'usure des bâtiments et les besoins de la SMD d'augmenter la capacité de production pour répondre à la croissance de ces marques, la décision fut prise de démolir la structure entière, à l'exception des chais, et de construire une nouvelle distillerie.
La production cessa en avril 1972 et recommença le 30 janvier 1974 dans la nouvelle distillerie avec 6 alambiques (dont 2 de la vieille distillerie) chauffés grâce à une chaudière chauffée au mazout. Le coût du projet fut d'environ £1mio. SMD transféra le contrôle de la distillerie à sa filiale Bulloch Lade & Co. Ltd puis à United Distillers en 1992. Depuis 1999, la distillerie produit également un distillat non tourbé appelé "Highland spirit".
