Germination: Once the barley has been steeped, the wet barley is germinated by maintaining the barley at suitable temperature and humidity. This is done on floor maltings, pneumatic maltings or Saladin boxes. Germination is the process of growth of the grain in which the seeds breaks apart, enzymes activated and the grain starts to sprout.
